Summer screams bbq and meat smokers. So we tapped the good ole folks at Ridgewood NJ's Smoked Restaurant for their best summer side. With Jersey corn and tomatoes ripening in August, you'll have this easy-to-prepare recipe on repeat.
Chef Robert @ SMOKED offered the following simple recipe for a seasonal salad that is fresh & delish! This salad is a healthy, flavorful accompaniment to grilled foods from traditional hamburgers & hot dogs to steak & chops.
White Bean & Fresh Corn Salad
Ingredients
6 Corn - shucked & kernels cut off husk
1 Can Cannellini Beans- drained & rinsed
1 Cup chopped cherry tomatoes*
2 Tbsp chopped fresh sage
2 Tbsp chopped fresh rosemary
2 Garlic cloves - minced
1/4 cup olive oil
Salt & Pepper to taste before serving
Method
Heat oil in a large skillet. Sautee garlic & herbs for about 1 minute. Add corn. Toss for about 2 minutes to heat corn.
Add beans, and fresh tomatoes & stir until heated throughout. Serve.
Once cooked- salad can be enjoyed warm or cold.
